Which is better, and I'll define better as shinier and smoother. So which one makes shinier and smoother leather jackets? Also which one is the better quality and tougher?

Only people that spend the extra money to buy leather themselves can spot the difference between the two. Otherwise,people don't know. As far as which one to choose, the synthetic is often more durable and designed to resist stains and wear &tear more- where as leather is just leather and can't be engineered to do anything. Definitely real leather, because it's more eco-friendly. Fake leather smells bad when it absorbs your sweat, rips easily, and can burn if left in direct sunlight. A real leather jacket will last at least 20 years, or longer if you brush it regularly with pure olive oil

Real leather is better quality.
