Your first idea of the gray and white is wonderful. You can also add pops of blue or even small pops of pink.
Your colors are in this picture. They added a deep gray and used yellow as an accent color. It looks great.
Go for the tumblr type room. You won't get sick of it, and you will never really get sick of grey or white. You'd become bored of a color like teal or orange

Maybe a white comforter and hanging lights up
Some pops of bright color
Or a boho theme
with bright colors and fun
Or a beachy theme
Orange walls or teal
